Did you hear? Justin Quek, easily Singapore’s finest chef is finally coming back to Singapore after he left Les Amis 2004 and setting up shop in Marina Bay Sands. The Sky on 57 is set suitably on the highest point of the property. (What’s interesting too is that he will be working in the same property as his good friend Tetsuya Wakuda who is also opening a restaurant there.)
So what’s in store for us? The press release promises Singapore and Asian food paired that with “his classic French cooking techniques and refined presentation style”. Expect all-day dining from breakfast, lunch to afternoon tea and swanky chill out dins with drinks and “spectacular views”. During the weekends, brunch will be served. Not much else has been revealed, but I suspect we will not be disappointed. SimplyFab ladies are looking forward!
Over in Bangkok, another ‘son’ is setting up shop in his ‘home ground’. Well, these inverted commas are there ‘cos David Thompson is Australian…..but under that veneer, he is Thai in soul and spirit, no doubt. He speaks fluent Thai, knows more about Thai culture and cuisine than anyone else and learnt his famous Thai cooking in Thailand from a former court lady! Anyway, he is opening up a nahm Bangkok at The Metropolitan Bangkok.
Expect a relaxed homey atmosphere with authentic, almost intellectual Thai food and “highly informative waiters”. Key dishes will include a jungle curry with an ugly, snake-headed local fish known as pla chorn grown in the rice paddies, a southern geng gati of crushed prawns with turmeric and coconut cream and nahm prik nuum, a northern relish of grilled chillies and tomatoes. For the record, David Thompson has earlier opened nahm, London which is a one-Michelin star restaurant.
