Binge - Eat Like Obama



APEC is over and the roads are back to normal. And if you fancy a sampling of what the world leaders ate when they were traipsing across our sunny congested island, the ever imaginative Fairmont Singapore has rolled out the APEC Menu. Available at Prego from 19 November for a limited period, this four course menu ($120) – designed by Director of Kitchens and old Singapore hand, Chef Otto Weibel – is exactly what the 21 world leaders wolfed down during the APEC dinner catered by the Fairmont Singapore at the Esplanade Theatres on the Bay recently.


The menu pretties up local dishes which you may or may not recognise after their extreme makeover. Appetiser is Lobster Poached with Pickled Watermelon, Tobico Pearls and Organic Cresse with Sweet Chilli Dressing flavoured with Lemongrass ($35++), followed by Soto Ayam with Steamed Scallop Mousse, Begedil Coulis ($18++) and for main course, five-spice Braised Beef with Edamame Puree Caramelised Tomato Lollipop ($52++). Dessert is Eight Treasures Cheng Teng Terrine Pina Colada Ice Parfait Coconut Streusel ($15++).
